Peanut Butter Chocolate Buckeye Balls

Ingredients
  

  • 1 cup creamy peanut butter
  • ½ cup unsalted butter softened
  • cups powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • cups semi-sweet chocolate chips
  • 1 tablespoon coconut oil or shortening

Instructions
 

  • Mix peanut butter, butter, vanilla, and salt until smooth
  • Gradually add powdered sugar until thick but pliable
  • Roll into 1-tablespoon balls and place on parchment
  • Chill for 30 minutes
  • Melt chocolate chips with coconut oil until smooth
  • Dip balls into chocolate, leaving a small circle exposed on top
  • Chill until chocolate is fully set

Notes

Use creamy, non-natural peanut butter for best texture
Keep centers cold for clean dipping
Store chilled for best flavor and shape
