Grilled Pineapple with Cinnamon Sugar Glaze

Ingredients
  

  • Pineapple:
  • 1 large fresh pineapple peeled and cored
  • 2 tablespoons melted butter
  • 1 tablespoon vegetable oil for grill
  • Cinnamon Sugar Glaze:
  • 3 tablespoons brown sugar
  • 1 tablespoon granulated sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • Serving:
  • Vanilla ice cream optional
  • Fresh mint leaves optional
  • Whipped cream optional

Instructions
 

  • Preheat grill to medium-high heat (400°F).
  • Cut pineapple into ½ inch rings or wedges.
  • Mix brown sugar, granulated sugar, cinnamon, and salt in small bowl.
  • Brush pineapple with melted butter on both sides.
  • Sprinkle cinnamon sugar mixture on both sides. Press gently.
  • Oil grill grates lightly.
  • Place pineapple on grill. Do not move for 3 to 4 minutes.
  • Flip carefully. Grill 3 to 4 minutes on other side.
  • Done when caramelized with grill marks and golden sugar.
  • Remove from grill. Transfer to platter.
  • Serve hot with ice cream, mint, or whipped cream if desired.

Notes

  • Use fresh pineapple for best flavor and texture
  • Cut pieces evenly for uniform cooking
  • Do not skip butter — helps sugar stick
  • Press sugar on so it sticks during grilling
  • Oil grill well — sugar sticks and burns easily
  • Do not move pineapple too soon — let it caramelize
  • Serve immediately while hot and crispy
  • Grill pan works if no outdoor grill
  • Can broil in oven 3 to 4 minutes per side
  • Best served fresh but can grill ahead
