Cold Brew Coffee Popsicles

Ingredients
  

  • Coffee Popsicles:
  • 2 cups cold brew coffee
  • 1 cup whole milk or half-and-half
  • ¼ cup sweetened condensed milk
  • 2 tablespoons sugar or honey
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional Mix-ins:
  • Mini chocolate chips
  • Cocoa powder
  • Caramel sauce
  • Cinnamon

Instructions
 

  • Combine cold brew coffee, milk, sweetened condensed milk, sugar, vanilla, and salt in large measuring cup.
  • Whisk until sugar dissolves and everything is combined.
  • Taste. Adjust sweetness. Should taste slightly sweeter than desired final flavor.
  • Stir in mix-ins if using.
  • Pour into popsicle molds. Fill to ¼ inch from top.
  • Place lids on or cover with foil.
  • Insert sticks through lids or foil into center.
  • Place in freezer on flat surface.
  • Freeze at least 4 hours or overnight until solid.
  • Run warm water over molds for 15 to 20 seconds to release.
  • Gently pull out popsicles.
  • Serve immediately or wrap and store in freezer bag.

Notes

  • Use cold brew for the smoothest flavor
  • Taste before freezing — make slightly sweeter
  • Do not overfill molds — liquid expands
  • Insert sticks when partially frozen if they lean
  • Run under warm water to release easily
  • Store wrapped individually up to 2 weeks
  • Adjust caffeine with decaf or espresso
  • Contains approximately 50mg caffeine per popsicle
  • Use dairy-free milk for the vegan version
  • Paper cups work if no popsicle molds
