Strawberry Cheesecake Eggroll Bites

Ingredients
  

  • 1 cup fresh strawberries diced
  • 2 tsp sugar optional, for tart berries
  • 8 oz cream cheese softened
  • ¼ cup powdered sugar plus more for dusting
  • ½ tsp vanilla extract
  • 12 eggroll wrappers
  • Water for sealing
  • Oil for frying or cooking spray for air fryer
  • Optional Toppings:
  • Chocolate sauce
  • Extra powdered sugar
  • Crushed graham crackers

Instructions
 

  • Prep Strawberries
  • Dice berries. If tart, toss with 2 tsp sugar and let sit 5–10 min.
  • Make Cheesecake Filling
  • In a bowl, beat together cream cheese, powdered sugar & vanilla until smooth and fluffy.
  • Assemble Eggrolls
  • Lay wrapper like a diamond.
  • Add a spoonful of filling, top with a few strawberry pieces.
  • Wet edges with water, fold bottom up, sides in, and roll like a burrito.
  • Tip: Don’t overfill—1 heaping tbsp is perfect.
  • Cook 'Em Up!
  • To Fry:
  • Heat oil (350°F) in skillet.
  • Fry 2–3 min per side until golden. Drain on paper towels.
  • To Air Fry:
  • Preheat to 375°F.
  • Spray rolls lightly with oil.
  • Air fry 6–8 min, flip halfway.
  • To Bake (Optional):
  • Brush with melted butter or spray with oil.
  • Bake at 400°F for 12–15 min, flip halfway.
  • Serve & Enjoy
  • Let cool slightly. Dust with powdered sugar, drizzle with chocolate, or dip into whipped cream or strawberry sauce.

Notes

  • Use jam or other berries (raspberries, blueberries)
  • Add crushed graham crackers inside for classic cheesecake vibes
  • Make ahead: Assemble and chill, then fry fresh
  • Freeze uncooked eggrolls and cook from frozen—just add 1–2 extra minutes
  • Make it fancy with vanilla ice cream on the side
