Prep Strawberries
Dice berries. If tart, toss with 2 tsp sugar and let sit 5–10 min.
Make Cheesecake Filling
In a bowl, beat together cream cheese, powdered sugar & vanilla until smooth and fluffy.
Assemble Eggrolls
Lay wrapper like a diamond.
Add a spoonful of filling, top with a few strawberry pieces.
Wet edges with water, fold bottom up, sides in, and roll like a burrito.
Tip: Don’t overfill—1 heaping tbsp is perfect.
Cook 'Em Up!
To Fry:
Heat oil (350°F) in skillet.
Fry 2–3 min per side until golden. Drain on paper towels.
To Air Fry:
Preheat to 375°F.
Spray rolls lightly with oil.
Air fry 6–8 min, flip halfway.
To Bake (Optional):
Brush with melted butter or spray with oil.
Bake at 400°F for 12–15 min, flip halfway.
Serve & Enjoy
Let cool slightly. Dust with powdered sugar, drizzle with chocolate, or dip into whipped cream or strawberry sauce.
