  • 1 tsp rum extract optional, non-alcoholic
  • 2 cups heavy whipping cream whipped to stiff peaks
  • Optional Toppings:
  • Toasted coconut flakes
  • Maraschino cherries or fresh pineapple chunks
  • Sugar-free whipped cream

Instructions

  • Beat softened cream cheese with sweetener, vanilla extract, and rum extract until smooth and creamy.
  • Fold in Coconut and Pineapple:
  • Gently fold in drained crushed pineapple and shredded coconut, keeping the pineapple pieces intact.
  • Incorporate Whipped Cream:
  • Carefully fold in whipped cream using a spatula, mixing just until combined to maintain a light, airy texture.
  • Chill:
  • Transfer the fluff to a serving bowl or individual cups. Refrigerate for 1–2 hours to let flavors meld and dessert firm slightly.
  • Serve:
  • Garnish with toasted coconut, maraschino cherries, or pineapple chunks. Serve chilled.
