One-Pot Ninja Foodi Meatloaf and Potatoes

Ingredients
  

  • For the Meatloaf:
  • 1 ½ lbs ground beef or beef/pork blend
  • 1 cup breadcrumbs or gluten-free crumbs
  • 1 egg
  • ½ cup milk or dairy-free alternative
  • ¼ cup ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • ½ tsp black pepper
  • For the Potatoes:
  • 1 ½ lbs baby potatoes halved
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • For the Topping:
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp mustard
  • For the Meatloaf:
  • 1 ½ lbs ground beef or beef/pork blend

  • For the Potatoes:

  • For the Topping:
  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tsp mustard

Instructions
 

  • Prepare the Meatloaf:
  • In a large bowl, combine all meatloaf ingredients.
  • Mix until just combined—don’t overmix.
  • Shape into a loaf and place it on a piece of foil (edges folded up).
  • Season the Potatoes:
  • Toss halved potatoes with olive oil, garlic powder, salt, and pepper.
  • Place them in the bottom of the Ninja Foodi pot.
  • Pressure Cook:
  • Place a trivet over the potatoes and set the foil-wrapped meatloaf on top.
  • Seal the lid, set to Pressure Cook on High for 20 minutes.
  • Quick release the pressure when finished.
  • Add Topping & Crisp:
  • Mix ketchup, brown sugar, and mustard. Spread over the meatloaf.
  • Close the Air Crisp lid and set to 400°F for 5–7 minutes, until the glaze caramelizes.
  • Serve & Enjoy:
  • Let meatloaf rest for 5 minutes. Slice and serve with the potatoes. Yum!

Notes

  • Lean Option: Use ground turkey or chicken.
  • No Dairy? Use broth or a dairy-free milk alternative.
  • Gluten-Free? Try gluten-free breadcrumbs or crushed crackers.
  • Veggie Boost: Add grated carrots or zucchini to the meat mix.
  • Flavor Boost: Try smoked paprika or Italian seasoning in the mix.
