Prepare the Meatloaf:
In a large bowl, combine all meatloaf ingredients.
Mix until just combined—don’t overmix.
Shape into a loaf and place it on a piece of foil (edges folded up).
Season the Potatoes:
Toss halved potatoes with olive oil, garlic powder, salt, and pepper.
Place them in the bottom of the Ninja Foodi pot.
Pressure Cook:
Place a trivet over the potatoes and set the foil-wrapped meatloaf on top.
Seal the lid, set to Pressure Cook on High for 20 minutes.
Quick release the pressure when finished.
Add Topping & Crisp:
Mix ketchup, brown sugar, and mustard. Spread over the meatloaf.
Close the Air Crisp lid and set to 400°F for 5–7 minutes, until the glaze caramelizes.
Serve & Enjoy:
Let meatloaf rest for 5 minutes. Slice and serve with the potatoes. Yum!
