Mini Cheesecake Stuffed Strawberries

Ingredients
  

  • Strawberries
  • 20 –25 fresh strawberries medium to large
  • Washed and completely dried
  • Cheesecake Filling
  • 8 oz cream cheese softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional Add-Ins & Toppings
  • ½ cup whipped cream or whipped topping for lighter filling
  • Lemon zest
  • Chocolate drizzle
  • Crushed graham crackers or cookies

Instructions
 

  • Remove strawberry stems and slice a thin layer off the bottom so they stand upright
  • Gently hollow out the center without piercing the sides
  • Place prepared strawberries on paper towels to absorb moisture
  • In a bowl, beat cream cheese until smooth
  • Gradually mix in powdered sugar and vanilla until creamy
  • Fold in whipped cream if using
  • Transfer filling to a piping bag or zip-top bag
  • Pipe filling into strawberry centers, slightly overfilling
  • Garnish as desired and refrigerate until serving

Notes

Use firm, evenly sized strawberries for best presentation
Dry strawberries thoroughly before filling to prevent runny filling
Fill shortly before serving for the freshest texture
Store refrigerated and consume within 24 hours
Do not freeze, as strawberries release excess moisture
