Ingredients

  • Chicken & Pasta
  • 2 boneless skinless chicken breasts (thinly sliced)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 12 oz pasta penne, fettuccine, or your favorite
  • Creamy Sauce
  • 3 cloves garlic minced
  • 1 tsp red pepper flakes optional
  • ½ cup sun-dried tomatoes chopped
  • 1 cup chicken broth
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 tbsp butter
  • ½ tsp paprika
  • ½ tsp dried basil
  • Fresh parsley for garnish

Instructions

  • Season the Chicken
  • Mix salt, pepper, garlic powder, and Italian seasoning. Coat chicken evenly.
  • Cook the Chicken
  • Heat olive oil in a skillet over medium-high heat. Cook chicken 3–4 minutes per side until golden and cooked through. Remove and set aside.
  • Sauté the Base
  • In the same pan, melt butter. Add garlic and red pepper flakes. Sauté until fragrant (about 1 min). Add sun-dried tomatoes and cook another minute.
  • Build the Sauce
  • Pour in chicken broth. Simmer 2 minutes. Reduce heat and stir in cream, Parmesan, paprika, and basil. Let it gently thicken.
  • Return the Chicken
  • Add cooked chicken back into the sauce. Simmer 3–5 minutes to soak in flavor.
  • Boil the Pasta
  • Cook pasta according to package directions. Drain, then toss with the sauce and chicken.
  • Serve & Garnish
  • Sprinkle with parsley and extra Parmesan. Serve immediately.

Notes

  • Lighter option: Use half-and-half instead of cream.
  • Add-ins: Spinach, mushrooms, or cherry tomatoes work great.
  • Heat it up: Add more red pepper flakes or a pinch of cayenne.
  • No sun-dried tomatoes? Roasted red peppers make a tasty swap.
  • Different chicken: Try grilled or rotisserie for convenience.
