Lemon Cream Cheese Bars

Ingredients
  

  • Crust Layer
  • 2 cups all-purpose flour
  • ½ cup powdered sugar
  • 1 cup unsalted butter cold and cubed
  • Pinch of salt
  • Lemon Cream Cheese Layer
  • 16 oz cream cheese softened
  • cups granulated sugar
  • 4 large eggs room temperature
  • cup fresh lemon juice
  • 1 tablespoon lemon zest
  • ¼ cup all-purpose flour
  • 1 teaspoon vanilla extract
  • Optional Topping
  • Powdered sugar for dusting
  • Lemon zest
  • Whipped cream

Instructions
 

  • Preheat oven to 350°F (175°C) and line a 9×13-inch pan with parchment paper
  • Combine flour, powdered sugar, and salt in a bowl
  • Cut in cold butter until mixture is crumbly
  • Press crust mixture firmly into the prepared pan
  • Bake crust for 18–20 minutes until lightly golden
  • Beat cream cheese until completely smooth
  • Add sugar and mix until combined
  • Add eggs one at a time, mixing on low speed
  • Stir in lemon juice, lemon zest, and vanilla extract
  • Gently mix in flour until just combined
  • Pour filling over warm crust and spread evenly
  • Bake for 30–35 minutes until edges are set and center slightly jiggles
  • Turn off oven, crack the door, and let bars rest inside for 20 minutes
  • Cool completely, then refrigerate before slicing

Notes

Use room-temperature cream cheese for a smooth filling
Fresh lemon juice provides the best flavor
Avoid overbaking to keep bars creamy
Chill thoroughly for clean slices
Store refrigerated up to 5 days or freeze up to 2 months
