Keto Loaded Cauliflower Soup

A creamy, cheesy, and hearty low-carb soup that captures all the flavors of a loaded baked potato without the carbs. Perfect for cozy dinners, meal prep, or a satisfying keto-friendly lunch.

Ingredients
  

  • 1 medium head cauliflower chopped into florets
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 4 oz cream cheese softened
  • 1 cup shredded cheddar cheese divided
  • 4 slices cooked bacon crumbled
  • 2 cloves garlic minced
  • 1 small onion chopped
  • 2 tbsp butter
  • Salt and pepper to taste
  • Optional toppings: sliced green onions extra cheddar, sour cream, chopped chives

Instructions
 

  • Melt butter in a large pot over medium heat. Sauté onion and garlic until translucent, about 2–3 minutes.
  • Add cauliflower and broth. Bring to a boil, then simmer 10–12 minutes until cauliflower is tender.
  • Use an immersion blender to puree the soup until smooth, or blend in batches.
  • Return to low heat and stir in cream cheese, heavy cream, and half of the cheddar. Mix until melted and creamy. Season with salt and pepper.
  • Serve in bowls topped with crumbled bacon, remaining cheddar, green onions, or other optional toppings.

Notes

Use full-fat cream cheese and heavy cream for extra creaminess.
Adjust consistency with additional broth or water if needed.
Blend thoroughly for a silky-smooth texture.
Taste and adjust seasoning after adding cheese, as it can add saltiness.
