Keto Loaded Cauliflower Soup

- 1 medium head cauliflower chopped into florets
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 4 oz cream cheese softened
- 1 cup shredded cheddar cheese divided
- 4 slices cooked bacon crumbled
- 2 cloves garlic minced
- 1 small onion chopped
- 2 tbsp butter
- Salt and pepper to taste
- Optional toppings: sliced green onions extra cheddar, sour cream, chopped chives
Melt butter in a large pot over medium heat. Sauté onion and garlic until translucent, about 2–3 minutes.
Add cauliflower and broth. Bring to a boil, then simmer 10–12 minutes until cauliflower is tender.
Use an immersion blender to puree the soup until smooth, or blend in batches.
Return to low heat and stir in cream cheese, heavy cream, and half of the cheddar. Mix until melted and creamy. Season with salt and pepper.
Serve in bowls topped with crumbled bacon, remaining cheddar, green onions, or other optional toppings.
Use full-fat cream cheese and heavy cream for extra creaminess.
Adjust consistency with additional broth or water if needed.
Blend thoroughly for a silky-smooth texture.
Taste and adjust seasoning after adding cheese, as it can add saltiness.
