Irresistible Pineapple Coconut Energy Balls

Soft, tropical, naturally sweet energy balls made with dried pineapple and coconut. A quick, wholesome snack that tastes like a sunny island treat.

Ingredients
  

  • For the Energy Balls
  • 1 cup desiccated coconut
  • ¾ cup dried pineapple soft type
  • 4 –5 tbsp honey or maple syrup
  • 1 tbsp coconut oil
  • 1 tsp vanilla extract
  • Pinch of salt
  • For Rolling
  • Extra desiccated coconut
  • Optional: crushed dried pineapple

Instructions
 

  • Add dried pineapple to a food processor and pulse until finely chopped and sticky, without turning it into a paste.
  • Add coconut, honey, coconut oil, vanilla, and salt; process until a thick dough forms. Adjust texture with more honey/oil if dry, or more coconut if wet.
  • Scoop portions using a spoon or small cookie scoop and roll into smooth balls.
  • Coat each ball in coconut or crushed pineapple and chill for 20–30 minutes until firm.

Notes

• Swap honey with maple syrup for a vegan version
• Add 1–2 tbsp vanilla protein powder for more nutrition
• Fresh pineapple won’t work due to excess moisture
