Herb Butter Baked Cod

Ingredients
  

  • Cod:
  • 4 cod fillets 6 oz each
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • Herb Butter:
  • 4 tablespoons unsalted butter melted
  • 3 cloves garlic minced
  • 2 tablespoons fresh parsley chopped
  • 1 tablespoon fresh dill chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • ¼ teaspoon paprika
  • Pinch of salt
  • Serving:
  • Lemon wedges
  • Fresh parsley

Instructions
 

  • Preheat oven to 400°F.
  • Pat cod fillets dry with paper towels.
  • Place cod in baking dish. Drizzle with olive oil. Season with salt and pepper.
  • Mix melted butter, garlic, parsley, dill, lemon juice, zest, paprika, and salt.
  • Brush herb butter over each fillet.
  • Bake 12 to 15 minutes until cod flakes easily and reaches 145°F.
  • Time depends on fillet thickness.
  • Remove immediately. Do not overbake.
  • Spoon pan butter over fish.
  • Serve with lemon wedges and parsley.

Notes

  • Pat fish dry before cooking
  • Use fresh cod if possible — thaw frozen completely
  • Do not overbake — check at 12 minutes
  • Use meat thermometer — done at 145°F
  • Let rest 1 to 2 minutes after baking
  • Choose similar-sized fillets for even cooking
  • Save pan butter to spoon over fish
  • Dried herbs work — use less
  • Store leftovers up to 2 days
  • Any white fish works with this method
