Fresh parsley for garnish
Instructions
Heat olive oil in large pot over medium heat.
Add onion, celery, and carrots. Cook 5 minutes.
Add garlic. Cook 30 seconds.
Add zucchini, green beans, and cabbage. Stir.
Add tomatoes and broth.
Add all herbs and spices.
Bring to a boil.
Reduce heat to medium-low. Cover.
Simmer 20 to 25 minutes until vegetables are tender.
Taste and add salt if needed.
Serve hot garnished with parsley.
Store leftovers for up to 5 days.
Notes
Cut vegetables evenly for uniform cooking
Do not overcook — vegetables should be tender not mushy
Use low-sodium broth to control salt
