Ingredients
  

  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • ¼ cup butter or coconut oil softened
  • ¼ cup monk fruit sweetener
  • 1 egg
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Preheat oven to 350°F (175°C) and line a baking tray with parchment paper.
  • Cream butter and sweetener until smooth. Add egg and vanilla; mix well.
  • Stir in almond flour, coconut flour, and salt until a soft dough forms.
  • Roll dough between parchment sheets to ¼ inch thickness.
  • Cut out cookie shapes and place on the prepared tray.
  • Bake for 10–12 minutes, until edges turn golden.
  • Cool completely before decorating with a sugar-free glaze (optional).

Notes

Avoid overbaking—almond flour browns quickly.
Chill dough before rolling for easy handling.
Store cookies in an airtight container for up to 5 days or freeze for up to 2 months.
Optional glaze: Mix powdered erythritol with almond milk and a splash of vanilla.
