In the yolk bowl, mix in blended cottage cheese, baking powder, salt, and optional sweetener.
Fold egg whites gently into the yolk mixture in batches. Avoid overmixing!
Scoop batter onto the baking sheet in small rounds, spacing them apart.
Bake for 25 minutes, until golden and puffed.
Cool completely to set the texture before serving.
