Fluffy Cottage Cheese Cloud Bread

Ingredients
  

  • 3 eggs separated
  • ½ cup cottage cheese
  • ¼ tsp cream of tartar
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp honey or sugar-free sweetener optional

Instructions
 

  • Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  • Separate the eggs into two bowls.
  • Whip egg whites with cream of tartar until stiff peaks form. (Don’t skip this—it’s what makes them cloud-like!)
  • Blend the cottage cheese until smooth. This step is key to getting the perfect texture.
  • In the yolk bowl, mix in blended cottage cheese, baking powder, salt, and optional sweetener.
  • Fold egg whites gently into the yolk mixture in batches. Avoid overmixing!
  • Scoop batter onto the baking sheet in small rounds, spacing them apart.
  • Bake for 25 minutes, until golden and puffed.
  • Cool completely to set the texture before serving.

Notes

  • No cream of tartar? Use a splash of lemon juice instead.
  • For sweet cloud bread, add vanilla extract.
  • Make it savory with garlic powder, herbs, or shredded cheese.
  • Store in the fridge up to 3 days in an airtight container.
