Instructions
Beat cream cheese and powdered sugar until smooth and thick
Add peppermint extract, vanilla extract, and salt; mix until fully combined
Refrigerate mixture until firm enough to roll
Scoop and roll mixture into small balls, place on parchment-lined tray
Chill again until firm
Melt chocolate with coconut oil or butter until smooth
Dip each truffle into melted chocolate, tapping off excess
Add toppings if using
Refrigerate until chocolate is fully set
