Easy Chicken Parmesan

Ingredients
  

  • Chicken:
  • 4 boneless skinless chicken breasts
  • 1 cup Italian breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 large eggs
  • 2 tablespoons water
  • Cooking spray
  • Topping:
  • cups marinara sauce
  • cups shredded mozzarella
  • ¼ cup grated Parmesan
  • Fresh basil optional

Instructions
 

  • Preheat oven to 425°F. Line baking sheet with parchment. Spray with oil.
  • Pound chicken breasts to ¾ inch thickness.
  • Beat eggs with water in shallow bowl.
  • Mix breadcrumbs, Parmesan, garlic powder, Italian seasoning, salt, and pepper in another bowl.
  • Dip chicken in egg. Coat completely.
  • Press into breadcrumb mixture. Coat both sides well.
  • Place on baking sheet 2 inches apart.
  • Spray tops with cooking spray.
  • Bake 15 minutes until golden and cooked through.
  • Remove. Top with marinara sauce.
  • Add mozzarella and Parmesan on top.
  • Bake 5 more minutes until cheese melts.
  • Rest 2 minutes. Garnish with basil. Serve hot.

Notes

  • Pound chicken to even thickness for uniform cooking
  • Pat chicken dry before breading
  • Press breadcrumbs firmly so they stick
  • Spray with oil before baking for crispy coating
  • Do not add sauce until chicken is fully cooked
  • Chicken is done at 165°F internal temperature
  • Let rest 2 minutes before serving
  • Can bread chicken 4 hours ahead and refrigerate
  • Freeze breaded chicken before or after baking
  • Serve with pasta and garlic bread for complete meal
