Crockpot Kielbasa and Green Beans

Ingredients
  

  • 1 lb kielbasa sliced into ½-inch pieces
  • 1 lb fresh green beans trimmed
  • 1 medium onion sliced
  • 3 cloves garlic minced
  • ½ cup low-sodium chicken broth
  • 2 tbsp soy sauce or tamari
  • 1 tbsp olive oil
  • 1 tbsp brown sugar or honey
  • ½ tsp black pepper
  • Optional: red pepper flakes for heat

Instructions
 

  • Lightly grease the crockpot with cooking spray or a little oil.
  • Place sliced kielbasa, onion, and garlic at the bottom of the crockpot.
  • In a small bowl, whisk together chicken broth, soy sauce, olive oil, brown sugar, and black pepper. Pour over kielbasa and onions.
  • Cover and cook on low for 3 hours.
  • Add the green beans, stir gently, and continue cooking on low for 1–1.5 hours until tender-crisp.
  • Taste and adjust seasoning if needed. Serve hot, with rice, mashed potatoes, or alone.

Notes

• Add green beans later to keep them tender-crisp.
• Slice kielbasa evenly for uniform cooking.
• Adjust sweetness and saltiness of the sauce to taste.
• Add red pepper flakes for a subtle kick.
