Crispy Parmesan Onion Ring Chips

- 2 large yellow onions sliced into thin rings
- 1 cup freshly grated parmesan
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- 1/2 tsp black pepper
- 1/4 tsp salt adjust to taste
- 1 tbsp olive oil or melted butter
- Optional: pinch of cayenne or red pepper flakes
Peel onions and slice into thin, even rings; separate layers and pat dry.
Place rings in a bowl and lightly coat with olive oil.
In another bowl, mix parmesan, garlic powder, onion powder, paprika, pepper, and salt.
Dip each ring in the parmesan mixture, pressing to help it stick.
Preheat oven to 400°F (200°C) and line a baking sheet with parchment.
Arrange rings in a single layer without overlapping.
Bake 18–22 minutes, flipping halfway, until golden and crisp.
Cool 5 minutes on the tray to firm up, then serve.
Freshly grated parmesan browns and crisps better than pre-shredded.
If chips soften, bake a few extra minutes to re-crisp.
Smoked paprika adds depth but can be swapped for regular.
Thinner onion rings = crunchier chips.
