Caramel Apple Cheesecake Bars

Ingredients
  

  • Crust Layer
  • cups graham cracker crumbs
  • cup unsalted butter melted
  • 2 tablespoons granulated sugar
  • Cheesecake Layer
  • 16 oz cream cheese softened
  • ¾ cup granulated sugar
  • 2 large eggs room temperature
  • 1 teaspoon vanilla extract
  • ¼ cup sour cream
  • Apple Layer
  • cups apples peeled and diced
  • 2 tablespoons unsalted butter
  • ¼ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon cornstarch
  • Topping
  • ½ cup caramel sauce
  • Chopped pecans or walnuts optional

Instructions
 

  • Preheat oven to 325°F (165°C) and line a 9×13-inch pan with parchment paper
  • Mix graham cracker crumbs, melted butter, and sugar
  • Press mixture firmly into the bottom of the pan
  • Bake crust for 10 minutes and let cool slightly
  • Melt butter in a skillet over medium heat
  • Add apples, brown sugar, cinnamon, and nutmeg
  • Cook until apples are tender but not mushy
  • Stir in cornstarch and cook 1 minute more
  • Remove apple mixture from heat and cool slightly
  • Beat cream cheese until smooth
  • Add sugar and mix gently
  • Add eggs one at a time on low speed
  • Mix in vanilla extract and sour cream
  • Spread cheesecake batter evenly over crust
  • Spoon apple mixture evenly over cheesecake layer
  • Drizzle caramel sauce on top
  • Sprinkle nuts if using
  • Bake for 40–45 minutes until edges are set and center slightly jiggles
  • Turn off oven, crack door, and cool bars inside for 30 minutes
  • Cool completely, then refrigerate before slicing

Notes

Use firm apples like Granny Smith or Honeycrisp
Avoid overmixing cheesecake batter to prevent cracking
Chill thoroughly for clean slices
Bars taste best the next day
Store refrigerated up to 5 days or freeze up to 2 months
