Ingredients

  • Truffle Filling
  • Cream cheese softened 8 oz
  • White chocolate chips or finely chopped white chocolate 2 cups
  • Vanilla extract 1 teaspoon
  • Powdered erythritol or powdered sugar 1 cup
  • Heavy cream 1 tablespoon optional if mixture is thick
  • Salt a pinch
  • Coating & Decoration
  • White chocolate chips 2 cups melted
  • Blue food coloring gel
  • Sprinkles edible glitter, pearl sprinkles, or crushed sugar snowflakes
  • Optional crushed freeze-dried blueberries

Instructions

  • Melt the white chocolate chips in 20-second microwave intervals, stirring between each round until smooth.
  • Beat the softened cream cheese until silky. Add vanilla, powdered sweetener, and salt; mix until lump-free. Add a little heavy cream if too stiff.
  • Pour in the melted chocolate and mix until thick and glossy. Cover and chill 2–3 hours until firm.
  • Scoop chilled filling into portions and roll into smooth balls. Place on a parchment-lined tray.
  • Melt the remaining white chocolate and tint with blue gel food coloring to your desired shade.
  • Dip each truffle, allow excess coating to drip, and return to parchment. Decorate immediately with sprinkles, glitter, or crushed freeze-dried blueberries.
  • Refrigerate about 30 minutes until the coating sets.

Notes

Use room-temperature cream cheese to avoid lumps.
