Birthday Cake Truffles

Ingredients
  

  • 8 oz cream cheese softened
  • cups finely crushed vanilla sandwich cookies or Golden Oreos
  • ½ cup boxed vanilla cake mix heat-treated
  • cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk or heavy cream
  • ¼ cup rainbow sprinkles
  • Pinch of salt
  • cups white chocolate or vanilla candy melts
  • 1 tablespoon coconut oil or shortening
  • Optional toppings: extra sprinkles white chocolate drizzle, colored sanding sugar

Instructions
 

  • Heat-treat cake mix at 350°F for 5 minutes; cool completely
  • Beat cream cheese, powdered sugar, vanilla, and salt until smooth
  • Mix in cake mix and crushed cookies until a thick dough forms
  • Add milk or cream gradually until mixture rolls easily
  • Fold in sprinkles gently
  • Chill mixture for 45 minutes
  • Roll into 1-tablespoon balls; place on parchment
  • Chill 30 minutes or freeze 15 minutes
  • Melt chocolate with coconut oil in short intervals, stirring until smooth
  • Dip truffles, tap off excess, decorate immediately
  • Chill 20–30 minutes until fully set

Notes

Always heat-treat cake mix for safety
Use full-fat cream cheese for best structure
Chill between steps for clean shaping
Let melted chocolate cool slightly before dipping
Store refrigerated up to 5 days or freeze up to 2 months
