Banana Bread Energy Bites

Ingredients
  

  • 1 cup rolled oats
  • ½ cup natural peanut butter or almond butter
  • cup mashed ripe banana about 1 medium banana
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • Pinch of salt
  • Optional: mini chocolate chips chopped nuts, flaxseed, chia seeds, shredded coconut

Instructions
 

  • In a bowl, mix mashed banana, nut butter, honey or maple syrup, and vanilla until smooth.
  • Add oats, cinnamon, and salt; stir until thick and evenly combined.
  • Fold in any optional add-ins.
  • Cover and refrigerate for 20–30 minutes to firm up.
  • Scoop about 1 tablespoon of mixture and roll into balls.
  • Refrigerate for another 15–20 minutes before serving.

Notes

Use very ripe bananas for the best sweetness and flavor.
If the mixture is too wet, add more oats; if too dry, add a little extra banana or nut butter.
Store refrigerated to maintain shape and freshness.
