1cupshredded cheddar cheeseor mix of cheddar & mozzarella
½cupgrated parmesan cheese
2large eggs
¼cupalmond flouror coconut flour

½tspsmoked paprikaoptional
Optional: 2 tbsp chopped parsley or chives
Optional Coating: ¼ cup crushed pork rinds or ¼ cup almond flour/breadcrumbs
Instructions
Steam or microwave broccoli 3–4 min, drain well, and press out excess moisture.
Mix broccoli, cheeses, eggs, almond flour, garlic, onion powder, salt, pepper, paprika, and herbs until sticky and cohesive.
Scoop and roll into 1–1.5 inch balls; optionally coat with pork rinds or almond flour.
Bake at 375°F (190°C) for 18–22 min until golden and firm. Serve warm.
Notes
Ensure broccoli is well-drained to prevent soggy balls.Sharp cheddar gives flavor; mozzarella adds gooey texture.Assemble ahead and refrigerate or freeze for later baking.Extra crunch: briefly broil baked balls for 1–2 min.Flavor variations: add chili powder, Italian seasoning, garlic, bacon, or toss in buffalo sauce.
