4th of July Firecracker Popsicles

Ingredients
  

  • Red Layer:
  • cups fresh or frozen strawberries
  • ¼ cup water
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • White Layer:
  • 1 cup vanilla yogurt or coconut yogurt
  • ½ cup milk or coconut milk
  • 2 tablespoons sugar
  • ½ teaspoon vanilla extract
  • Blue Layer:
  • cups fresh or frozen blueberries
  • ¼ cup water
  • 2 tablespoons sugar
  • 1 tablespoon lemon juice
  • Optional:
  • Blue food coloring

Instructions
 

  • Blend strawberries, water, sugar, and lemon juice until smooth.
  • Strain to remove seeds if desired.
  • Fill popsicle molds one-third full with red mixture.
  • Freeze 1 hour until completely solid.
  • Mix vanilla yogurt, milk, sugar, and vanilla extract until smooth.
  • Pour white layer on top of frozen red layer. Fill to two-thirds full.
  • Freeze 1 hour until completely solid.
  • Blend blueberries, water, sugar, and lemon juice until smooth.
  • Strain if desired. Add blue food coloring if needed.
  • Pour blue layer on top of frozen white layer. Fill to top.
  • Insert popsicle sticks in center.
  • Freeze at least 2 hours or overnight until solid.
  • Run warm water over molds for 15 to 20 seconds to release.
  • Serve immediately or store in freezer up to 2 weeks.

Notes

  • Freeze each layer completely — wait full 1 hour between layers
  • Do not rush or colors will bleed together
  • Use clear molds to see layers better
  • Strain for smoother texture without seeds
  • Add blue food coloring if blueberries are not bright enough
  • Do not overfill — liquids expand when frozen
  • Run under warm water to release from molds
  • Can make up to 2 weeks ahead
  • Use paper cups if no popsicle molds
  • Store in sealed freezer bag after removing from molds
